National Popcorn Day

It is National Popcorn Day!  What a good way to celebrate whole grains!  I know, I know, grains are bad, right? Well, too much of anything is probably bad, and most of us eat too many, but we all end up eating grains from time to time.

Organic popcorn is a whole grain, fairly inexpensive, and easy to prepare.  One cup of plain popcorn yields about 30 calories,  6 g carbs, 1 g fiber, 1 g protein. I find it a better snack food for my kids than crackers and chips. I mean, what is a movie without popcorn? Sure, you can adulterate it into some sinful snack, but my favorite preparation is to air pop it in a very small amount of coconut oil and sea salt. You may want to double your batch because it can disappear rather quickly! Enjoy!

Organic Popcorn

1 tsp coconut oil
1/2 cup organic popcorn
Sea salt

Melt coconut oil in an air popper (follow manufacturer's instructions) or a cast-iron skillet (on medium heat) with a tight fitting lid.  Add popcorn to melted oil and replace lid. Cook until their is no popping for two seconds. Remove from heat and salt to taste.
